Tasty Tuesday

well, almost. It'll be Tuesday in 2 hours.  This post is on JUICE!  One of my New Year's resolutions was to pull out the good ole' juicer and put it to use at least 3x/week.  Well, we've done pretty well so far.  Trying to squeeze (literally) those fruits and veggies in where we can!  The thing that's be such an inspiration to continue it and try to make juicing a regular habit around here is just how much the kids LOVE it!  Seriously, they love to help get out all the produce and then sit on the counter and take turns putting chunks in.  Especially the boys, they get so excited. 

Don't go thinking we're uber healthy and all organic, we're not, but we ARE TRYING to eat better and I can really tell a difference in my energy level after I've had a tall glass of pure fruits and veggies.  And, it's one of the only ways I can get a wide variety of veggies in the kids.  I've even found if I haven't had it in a few days, I begin to crave it.  It's an acquired taste, but it didn't take long. 

Here's a list of some of our regular produce that we like to put in.  I do have a juice recipe book, but I've gotten to where I know what combos taste good.  I always try to use more veggies than fruit, for the benefits, but the trick is learning what fruits will make the juice taste yummy.
carrots, celery, parsley, cucumber, beets, spinach, broccoli, ginger, apples, oranges, pears, kiwi, pineapple, cantaloupe, strawberries, blueberries.  *I do not use all of these in one setting, I usually take a combo of about 4 servings of  veggies and 2-3 servings of fruits.  It takes a lot of produce to get a little juice.


So, I encourage you, if you have a juicer, get it out and use it!  It's well worth the benefits.  It's not too often I create good habits, here's to hoping this one sticks.  Cheers!

Tasty Tuesday

Granola Goodness

I have been eating this since I was little.  I have such fond memories of my mom making it and the yummy aroma filling our house.  It can easily be altered to your liking, feel free to experiment!  The recipe makes a lot (about 8 quarts) so I sometimes half it.  Measurements are in parentheses for half.

Mix the following ingredients together in a large container:
10 2/3 (5 1/3) cups rolled oats
2 (1) cups nuts and/or seeds, (i.e. pecans/walnuts/sunflower seeds) chopped
1 (1) cups wheat germ
1 Tbs. (1 1/2 tsp) salt
2 (1) cups coconut (I love coconut so I always add more!)
In a bowl combine the following ingredients:
1 1/2 (3/4) cup safflower oil (can use other oils too if you don't have this one)
2/3 (1/3) cup hot water
3 (1 1/2) Tbs. vanilla
2 (1) cups honey

Extras I add in:
1/2 (1/4 cup) flax seed
2 (1) tsp. cinnamon
2 (1) cup raisins (after granola is cooled).

Add wet mixture to dry and mix well.  Spread 1/2" thick on oiled cookie sheets (with edges).  Bake at 250 degrees for 1 1/2 hours-turning thoroughly after the first 1/2 hour and then every 15 minutes thereafter until light and golden brown.  The aroma in your house will be delectable!!  Store in air tight containers or zip-loc bags.

Cheeseburger Salad

This is the ONLY salad my husband ever requests, it's a yummy one!  Here's what you'll need.

Ground lean turkey
worcestershire sauce
head of green leaf lettuce
red onion
tomatoes
pickles
cheese
For dressing:  mustard and vinegar


(don't forger your very enthusiastic salad spinner!)

season your ground turkey with the worcestershire sauce and some steak seasoning, garlic salt, pepper...etc.  Form into mini patties and fry in a pan, placing cheese on at the end after you've turned the burner off.

Add cheeseburger patties to your lettuce, chopped tomatoes, pickles and onions.  To make dressing, use about 1/3 cup of mustard and wisk with a few teaspoons of vinegar!

This is a very tasty and healthy alternative to a regular cheeseburger, but let's face it, this doesn't always cut it and sometimes you just need to stuff your face with a good old McD's cheeseburger!

Tasty Tuesday

ok, I don't know what the name of this is, so we'll just call it "THE pie."  It's terribly sinful, just like all things wonderful and bad for you.

1 18 oz. tube refrigerated chocolate chip cookie dough.
2 8 oz. packages of cream cheese, softened
1/2 cup sugar
2 eggs
5 chocolate covered toffee candy bars (such as Heath) broken into pieces.

Preheat oven to 350. 
STEP 1:   Press cookie dough into ungreased pie dish. 
STEP 2:  In a large bowl, combine cream cheese, sugar, eggs and 3 candy bars (that have been broken into small pieces).  Pour into pie dish.
STEP 3:  Bake for 30 minutes.
STEP 4:  Cool completely and top with remaining 2 candy bar pieces.  Refrigerate until ready to serve.  Store in refrigerator or freezer.  Enjoy friends!!

Homestyle Turkey Meatloaf
A fun and healthy spin on your traditional meatloaf dish, this recipe comes from Eating for Life.


1 1/2 lbs lean ground turkey
1 onion, chopped
4 egg whites
1 cup salsa
3/4 cup old-fashioned oats, uncooked
1 pkg Knorr Vegetable Soup mix
1/4 tsp ground black pepper
1/2 cup ketchup

In a large mixing bowl, combine all ingredients except ketchup.  Press mixture into a 9" x 5" loaf pan and spread ketchup over top.  Bake in preheated 350 degree oven for approx. 60 minutes.
Note:  Since having kids, rather than using a loaf pan I always divvy up the meatloaf mixture into a muffin pan.  1. Kids think eating "meatloaf muffins" is fun.  2.  It's the perfect portion size.  We usually only eat 6, so I freeze the remaining 6 for another dinner!

Great served with baby potatoes and a veggie!

Tasty Tuesday

So, every Valentine's Day, I like to make a special breakfast for my crew. This year was no exception. With all three of our boys being under the weather, Grace and I took the kitchen by storm and tried out this fabulous new pancake recipe! Pink Pancakes! G was in pinkalicious heaven. Before taking a peek at the recipe, does anyone want to take a stab at what made the pancakes pink? I'll give you a clue, it was NOT food coloring!

Later that afternoon, we took the leftover magic pink mixture and added it to our sugar cookie dough to make beautiful masterpieces. I tell ya, I've got a self-professed "cooker-baker" at my fingerstips. The girl loves to get crafty in the kitchen!

Dried Cherry & Almond cookies with vanilla icing

Gotta love me some Giada! I'm cheating a little bit today. I haven't actually tried this recipe out yet. It was in my in-box today from Food Networks 12 days of cookies. I printed it out right away and can't wait to make them, they sound delicious. If they turn out good, I think I'll put them in goodie bags for some friends and co-workers for Christmas! Pumpkin Chocolate Chip Muffins

We LOVE these this time of year, in fact, I make them more than I should! They also freeze well and make great gifts.

Pumpkin Chocolate Chip Muffins
2/3 cup white sugar
¼ cup vegetable oil
2 eggs
1 cup of pureed pumpkin
¼ cup milk
1 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 cup of chocolate chips

Preheat oven to 400 degrees (200 C). Grease and flour muffin pan or use paper liners.
Mix sugar, oil, eggs. Add pumpkin and milk. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt. Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes. (18-22 min for mini muffins).
Variations: You can substitute chopped walnuts for the choc. Chips. I also add a jar of baby food, either mixed veggies or applesauce to make them healthier for kids and this also makes them very moist.

Homestyle Chicken Pockets

My friend Alicia gave this recipe to me a few years ago and we have it often, my kids even like it! It's simple, easy, filling and healthy.
Ingredients: chicken breasts, Dijon mustard, paprika, S&P, mushrooms, squash, carrots.

Double up a few large pieces of foil and place chicken, topped with mustard and paprika.

Chop up fresh veggies and pile on top. (I then add a few dabs of butter and the S&P).

Create a "pocket" with the foil and seal it as best as you can. Place it in oven and bake at 375 for 30-40 minutes.

Dish out and enjoy! I usually serve it with rice.
