We LOVE these this time of year, in fact, I make them more than I should! They also freeze well and make great gifts.

Pumpkin Chocolate Chip Muffins
2/3 cup white sugar
¼ cup vegetable oil
2 eggs
1 cup of pureed pumpkin
¼ cup milk
1 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 cup of chocolate chips
Preheat oven to 400 degrees (200 C). Grease and flour muffin pan or use paper liners.
Mix sugar, oil, eggs. Add pumpkin and milk. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt. Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes. (18-22 min for mini muffins).
Variations: You can substitute chopped walnuts for the choc. Chips. I also add a jar of baby food, either mixed veggies or applesauce to make them healthier for kids and this also makes them very moist.

I bought the stuff to make them this weekend. . . .did you know there is apparently a shortage of pumpkin this year?
yes I did hear that Kelly, but so far, I haven't had any problems, I've been buying extra though just in case! Hope you enjoy them.
