Rhett's First Bleed.


Well the honeymoon is over. After Rhett was born, they ran the tests and told us he was a hemophiliac, but when things go really smoothly and nothing happens for 4 months, a little voice in the back of your mind says, "maybe he doesn't have hemophilia."

A couple weeks ago, we noticed a little knot on Rhett's chest, and we didn't think much of it. But after a long Saturday of tailgating and passing Rhett from one willing person to the next, we came home one evening and the knot had turned into a full fledged bruise.

The good thing that you will notice from the picture is that the bruise doesn't seem to bother him.

I also have to brag on my wife a little. We noticed this bruise late at night and we didn't want to go to the ER or have our nurse drive 3 hours to infuse Rhett. Thus, Becca decided we should try it on our own. Becca got inside Rhett's LITTLE viens the very FIRST try. She did awesome!

Today on this day of Thanksgiving, I'm so thankful for my wife and the health of my children. God is SO good!

Tasty Tuesday

Pumpkin Chocolate Chip Muffins

We LOVE these this time of year, in fact, I make them more than I should! They also freeze well and make great gifts.

Pumpkin Chocolate Chip Muffins
2/3 cup white sugar
¼ cup vegetable oil
2 eggs
1 cup of pureed pumpkin
¼ cup milk
1 ½ cups all-purpose flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon salt
¼ teaspoon ground nutmeg
1 cup of chocolate chips

Preheat oven to 400 degrees (200 C). Grease and flour muffin pan or use paper liners.
Mix sugar, oil, eggs. Add pumpkin and milk. In separate bowl mix together the baking flour, baking soda, baking powder, spices and salt. Add wet mixture and stir in chocolate chips.
Fill muffin cups 2/3 full with batter. Bake in preheated oven for 20-25 minutes. (18-22 min for mini muffins).
Variations: You can substitute chopped walnuts for the choc. Chips. I also add a jar of baby food, either mixed veggies or applesauce to make them healthier for kids and this also makes them very moist.

Autumn Activities

This time of year gets a little crazy for us, a lot of birthdays, fall festivities, football, you name it! So if we look a little heavier in the pictures it's from all the cake. ;) Rhett just turned 4 months and is laughing and rolling over. Thankfully, we've all had good health so far. The pictures on the farm were taken at DP's Fall party, which was on a farm in southern Missouri this year. They had hay rides, pony rides, a huge bonfire and lots of activities for the kids. Enjoy the pics!

Tasty Tuesday

Homestyle Chicken Pockets

My friend Alicia gave this recipe to me a few years ago and we have it often, my kids even like it! It's simple, easy, filling and healthy.
Ingredients: chicken breasts, Dijon mustard, paprika, S&P, mushrooms, squash, carrots.

Double up a few large pieces of foil and place chicken, topped with mustard and paprika.

Chop up fresh veggies and pile on top. (I then add a few dabs of butter and the S&P).

Create a "pocket" with the foil and seal it as best as you can. Place it in oven and bake at 375 for 30-40 minutes.

Dish out and enjoy! I usually serve it with rice.

who is who?

This is not near as hard as I thought it would be. I realize I am missing one kid, but that one would have been too easy. ;)

Also, stay tuned for my new blog column, Tasty Tuesdays...a lot of my blogger friends have a whole separate blog for food, recipes, etc. Well, I can hardly keep up with this one, but love the idea, so I'm going to try to post a recipe every few weeks. I tried the Wednesday Funny for a while but it turns out I'm a better cook than comedian so, I'll give it a go...that is, assuming some of you will actually try them out or enjoy it? give me your feedback because I don't want to waste my time folks!
